James Beard-honored chef Tyson Cole is bringing Uchiko, a smoky offshoot of his Japanese sushi spot Uchi, to Bethesda.

Cole’s Austin, Texas-based Hai Hospitality has leased the 9,000-square-foot former Ruth’s Chris Steak House space at 7315 Wisconsin Ave. for Uchiko, meaning “child of Uchi,” with plans to open in late 2025.

The “fire-forward interpretation of Japanese cuisine,” as Hai describes Uchiko in marketing material, features live-fire cooking, with dishes including wood-grilled Branzino, wagyu beef ribs and yakitori-style skewers. The restaurant will also serve up a selection of sushi and sashimi offerings.

Mike Howard and Pat O’Meara, both of Rappaport, represented the landlord in the restaurant deal.
